Zucchini Banana Bread Minis

Ingredients & Directions

1 cup Coconut Flour

10 Eggs (Cage free and brown)

1/3 cup Extra Light Olive Oil

1/3 cup Maple Syrup

1 Large Zucchini, grated (I spiralized mine first and then chopped it into smaller pieces)

8 Baby Bananas (equivalent to 4 regular) very ripe

2 Tbsp Vanilla

2 tsp Baking Soda

1 tsp Cinnamon

1/2 tsp Sea Salt

1 cup Coarsely Chopped Raw Walnuts

1/2 cup Dark Chocolate Chips (I use 365 brand from Whole Foods - 70% Cacao … the darker the better)

Directions

Preheat oven to 325°.

Place first 10 ingredients in a large bowl. Use an immersion blender to blend eggs, further break up banana chunks and further reduce zucchini pieces. When the batter is blended, fold in walnuts and chocolate chips (don't blend).

Pour into 4 greased mini loaf pans (each approximately 3x5x3). Bake for 55 minute or until a toothpick comes out clean. Cool and remove from pans.
