Simply My Favorite Salad
There's a lovely little restaurant very near downtown Arlington, TX that I love to visit and love to tell people about. Her concept is novel to most and the food and atmosphere is unique and charming. There are few places that work with local farmers and producers to secure and serve organic vegetables and fruits as well as grass-fed meats. This is one such place. When I want to eat away from home, I know that I can eat clean and healthy at Potager Cafe ... and deliciously. It's like walking into someone else's home for a great meal ... someone who really cares. Below is my version of the wonderful green salad that's almost always served there. We have this regularly with our meals and I love it ... but I still love having it at Potager Cafe even more! Why does it always taste better when someone else makes it?
Ingredients
1/2 cup Dijon Mustard
1/2 cup Honey (local, raw and unfiltered)
2 tsp Mustard Powder
3/4 cup Champagne Vinegar
3/4 cup Extra Light Olive Oil
1 tsp White Pepper
1 tsp Sea Salt
Directions
Place all ingredients in a high powered blender or Vitamix and blend until completly emulsified for 3-5 minutes.
**** Serve over a mixture of baby field greens and baby spinach. Top with dried currants and toasted sliced almonds.
**** Obviously variations are simple with this dressing. Try different mustards and vinegars or differents toppings and seasonal greens.
