Easy Meaty Chili
This chili is really so simple. It came about from a desire for chili to top my bun-less hot dogs. I used to labor over chili for hours, hand-cutting select tender beef and worrying with tomatoes and beans and such. No more! Simple and quick is good sometimes. The recipe calls for a single hard apple cider. I used to use a beer in my pre-paleo days. Look for a cider that is low in sugar. The one pictured below has 10g of carbs with 7g of sugar. It's made from fermented apples only, has no preservatives and is naturally gluten free. Something just RIGHT happens when chili gets a little fermented alcoholic liquid so don't skimp here! I like the combination of the 4 different ground meats but you can use any combination that makes you happy as long as it's approximately 4 lbs. Another one-bowl-wonder too ... or one-stock-pot-wonder I guess. Enjoy!
Ingredients
1 lb Ground Venison
1 lb Ground Beef
1 lb Ground Chicken
1 lb Ground Bison
2 c Finely Chopped Red Onion
1 33.5 oz Carton HUNTS All-Natural Tomato Sauce
1 12 oz Hard Apple Cider
1/2 c water
8 Tblsp Chili Powder
3 tsp Cumin
1 1/2 tsp Cayenne Pepper (or to taste)
1 1/2 tsp Paprika
1 1/2 tsp Sea Salt
1 tsp Dried Oregano
Directions
Brown meat in a large stockpot over medium-high heat. Strain fat if desired ... I do not.
Add onion, tomato sauce, water, cider and all spices.
Mix thoroughly and reduce heat to low. Cover and simmer approximately one hour until onions are tender stirring occasionally.
If you desire the chili a little thicker, simply remove the lid and simmer on low allowing some of the water to cook out.
