Braised Coconut Vanilla Carrots

Sometimes the simple recipes are the best. This one holds true to that promise. This recipe has very few ingredients and is very simple to execute. The result is pure deliciousness. There isn't a more tasty carrot. I love getting lots of carrots in my co-op because I know this is how they're going to be prepared. It's my family's new favorite side dish! 


2 1/2 lbs Fresh Organic Carrots

3 Tblsp Coconut Oil

2 Tblsp Pure Vanilla 


Braise carrots over very high heat in a large nonstick skillet for about 10-15 minutes until they begin to soften and have brown caramelization. Then turn heat down to medium and add coconut oil and vanilla. Continue to cook for another 5 minutes until moisture is absorbed and carrots have reached desired tenderness.
