"Frappuccino" Panna Cotta
Panna cotta is an Italian dessert made by simmering together cream, milk and sugar, mixing this with gelatin, and letting it cool until set. It is generally from the Northern Italian region of Piedmont, although it is eaten all over Italy, where it is served with wild berries, caramel, chocolate sauce or fruit coulis. My Frappuccino Panna Cotta is a Paleo version that reminds me of the cold coffee beverage that I had a temporary addiction to years ago ... hence the name. Ingredients
2 cups Coconut Cream
1 1/2 tsp Unflavored Grassfed Gelatin
3 tsp Instant Espresso Powder
(try Starbuck's Via or Nescafé)
1/4 cup Coconut Palm Sugar
1/2 tsp Cinnamon
A Pinch of Sea Salt
2 Tblsp Enjoy Life Mini Chocolate Chips
Directions
Put the coconut cream into a sauce pan and sprinkle the gelatin over the top. Allow this to stand for 10 minutes while the gelatin softens. Over medium heat, stir the cream until the gelatin combines. Do not allow the cream to boil. Add the coffee powder, palm sugar, cinnamon and salt. Whisk over low heat until the sugar dissolves completely. Remove from heat and allow to cool to room temperature. When cooled, divide mixture into serving glasses and refrigerate until completely set (2-4 hours). Garnish with chocolate chips and serve very cold.
